Whole Wheat Blueberry Beet Muffins

Ingredients

  • 1 1/4 cups whole wheat flour
  • 3/4 cup rolled oats
  • 1 3/8 tsp baking soda;1/2 tsp lemon juice
  • 1 teaspoons ground cinnamon
  • 1/8 teaspoon salt
  • 1/2 cup olive oil
  • 1 cups banana smashed
  • 1 large egg
  • 1/2 cup water
  • 1 cup fresh blueberries
  • 1/2 cup shredded peeled beets

Directions

  • Preheat oven to 350 degrees F (175 degrees C). Grease 6 big muffin cups.
  • Mix the whole wheat flour, rolled oats, baking soda, lemon, cinnamon, and salt in a large bowl. In a separate bowl, mix the oil, smashed banana, eggs, and water. Pour the wet mixture into the dry ingredients, and stir to combine. Gently fold in the blueberries and shredded beats.
  • Spoon the batter into the prepared muffin cups.Bake in the preheated oven until browned and a toothpick inserted into the center of a muffin comes out clean, 25 to 30 minutes.
